What is best exposure time and apperture for inside of a church without using a flash in digital photography?

Without being at the Church and seeing the conditions, natural light, available artificial light, how the light falls etc, it is impossible to give a spot on answer. It depends what you are photgraphing and what effect you are after.
You really need to learn how the aperture and shutter speed relate to one another, and to recognize how they affect the look of the final image.
The camera should work that out for you but if you have a lightmeter try that and stick your camera on manual and use the reading from the lightmeter, hope that helps..good luck !
Set up a tripod. Use the largest aperture you can (smallest number). If the camera doesn't automatically select a shutter speed, set it yourself: start at 1/10 sec, 1/15 sec, 1/30 sec. 1/60 sec.

One of those should produce a good image.
You'll have to go on site and see. Set your camera at ISO 400 and see how it goes.
Like inverse said,
use a large apeture, which will let more light in, your shutter speed will determine your blur,
are you shooting on a tripod or holding the camera. If there wont be any movement in the shot, then a tripod with a slow shutter speed will work fine. It all depends on your camera and lens.
Are you shooting a Slr, DSlr, or other??
To answer, you must tell us the type and make of camera and if
it is a film or digital. If film, what is the speed of the film. What is
the church like, lateral and front (altar) stained glass windows,
are they large or small in relation to total space. Lots of people
expected at wedding, since dark clothes do not reflect light. It
is impossible to guess these conditions. Last question, what is
the maximum aperture of the lens and if it is a zoom, what is
the maximum aperture with zoom fully in "tele" mode.
