How much do we charge??

My wife is interested in On-site photography, is it better to charge by the job or hourly? Also how much (percentage) do we need to put aside out of every job for taxes. Thanks in advance for the help.

Better to charge by the job, because you really can't charge for setup time, and take down time, and travel time. Well you can but really shouldn't. Also taxes very by county and state so you need to look it up in your area. Also make sure you have a business license or you could be fined.
When you're a photo-journalist, you get paid by the hour or by the shot. When you're shooting events, you should probably charge by the job. That's pretty much the common practice and I don't know of anyone that has had it work well in the opposite manner.

In Colorado, I set aside a dollar to every five, but I usually get a decent refund as personal income, working without a business license.

What I highly recommend is calling around and getting prices from some local photographers. Start about $10 bucks under from them and get in some basic venues such as weddings, and such. Your business is about 50% word of mouth based clientel. After you get enough clients that like your work, they will find you your future enterprise when you can raise your rates to standard etc.

One last piece of advice, high schools usually like to keep a professional photographer at big events like prom and winter formal or whatever to do individual shots. Work like a dog to get these contacts and be willing to negotiate. If you do well there, you get hit for senior photos, future dances and all sorts of future events (such as their weddings.) Just like the smoking industry, get them while they're young. : )
Since you never mentioned what type of shooting you will be doing I would also say come up with a flat fee and be reasonable at your rates. If they are you will get more business than somebody priced to high.

In the past I have gotten extra jobs from doing one job and then these people found me later to get me to do their weddings, formal attire balls, 16th birthday events etc... if you are good and your prices are reasonable means more photo opportunities. Word of mouth is your best advertising.... and your worst if you are bad.

As for taxes you will have to check what the rates are for your state.

Hope this helps,
Kevin
