I'm thinking about the Nikon D80 but I'm curious to know what everyone else thinks The D80 is a GREAT entry level camera. Actually, Nikon has positioned their D40 as the entry level camera and it's quite a nice camera in its own right.

Nikon D40
The Nikon D40 is a great little camera, very easy to use and quite reasonably priced. It has a few "consumer friendly" totally automatic modes that make it very easy to use - including a "Child Photo" mode - but still offers total photographic control when you are ready to take charge. It will get you in the Nikon family which is a great place to be. If you buy accessories and lenses, you will be able to use everything on any Nikon that you might upgrade to later on.

Nikon D80 Reviews
I own a D70s and D200, so I can't comment on the D80 from experience, but between the size and feel of the D70s and the sensor and processing of the D200, I have formed an opinion. One of these articles is subtitled, "Psst - Want a D200 at half the price?" If the D80 came out before I bought my D200, I may have bought that and been happy enough to stick with it. There are only a few tricks the D200 can do that the D80 can't and the D80 can even do a couple that the D200 can't. Here are a few links, in case you have not seen this material yet. ~~~~~~~~~~ I like your attitude. It is indeed possible to "outgrow" the D40's, but highly unlikely with the D80. You might want some "different things," but it won't be because the D80 can't keep up with your needs. Report It
The D80 is a good choice. It has a lot of the features that its big brother the D200 does. I think that's a good choice. Go for it. The Nikon D80 is a great entry level dSLR. But I wouldn't recommend it. I would recommend the Pentax K10d. This dSLR has a shake reduction(SR), also known as vibration reduction or image stabilization, waterproof and weathering seals,(the only one with it in it's price range), it has a 22 bit analog to digital converter, and a dust remover.
