In Wedding Photography (on location) do wedding photographers use special lighting, or do they just use?

their flash?

Usually just the flash. If it's outside in one spot, they may bring special equipment since all the pictures would be taken in one place. Most locations aren't like that, you're looking for different backdrops to make your pictures special. Flash is all they would use.
Proud is correct, unless you have unlimited funds and the photographer pre-sets all his pose positions with studio strobes.
Normally just a flash
If the photographer has an assistant, they might also use reflectors outside. These reflect light to help fill in shadows.
Most professional photographers will try to use their flash as little as is needed. Natural lighting is much more pleasing than the white reflection coming off of peoples faces. They have good lenses that usually cost quite a bit, after all they are pros or should be if that's what they call themselves. But there are times when a flash is necessary, like when you exchange rings. Its more important to get that instant than anything else in the world.

Additional:

As another here has stated, pros have better flashes. Aside from being more powerful they are also faster to cycle and have manual control over how much light is bieng put out. Some photographers will use reflectors and other bigger things but most people dont want to see a bunch of photography equipment on one of the most special days of their lives.
Most photographers I've worked with will at least have a reflector or two on hand. Just flash lighting is usually very harsh, so they'll try to do anything to diffuse it. Some may have a separate flash. But realize, the more equipment they have, probably the more you're going to spend.
Usually good photographers always have a flash attached to their cams. However, they do not use the flash all of the time. Good photographers can make use of available and or natural light, or to enhance any natural lights available, they can use reflectors to mimic a 2 or 3 light effect. That is used to bring out the subject, even out the lights to make the wedding photograph not look like a shotgun pose.

If you want a studio set-up, let the wedding photographer know. Usually a studio set-up is used when you want your portraits taken on the location. However, if your photographer is a creative genius he can make portraits out of a single flash on one side and a reflector on the other side or plain diffusers.

Do ask, but a studio set-up might cost you more than double.
